Breakfast Tamale Casserole

  • 1 cup masa harisa
  • 1 cup warm water
  • 1/3 cup lard
  • Dash salt

Mix into batter, press into bottom of loaf pan

  • 1lb pork breakfast sausage, browned
  • 4oz cheddar cheese, chopped
  • 6 eggs, beaten

Layer pork and then cheese on top of masa.

Pour eggs on top.

Bake at 350°F for 40 to 45 minutes or until eggs are set and cheese is browning.

Notes for next time: Find a different fat than lard, or dilute with some bacon grease or veg oil for better flavor. The corn layer separated from the egg/sausage layer, is there any way to bind them together? Maybe add baking powder to leaven a bit.

Rhubarb Pie (2014)


Crust
• 1 cup gluten free flour (I used the Trader Joe's mix)
• 2 cups almond meal
• 3T sugar
• 2 eggs
• 2T melted butter
• Water or milk or yogurt, as required, to get to a moldable thick consistency (needs to hold up when pressed against the sides)
  ○ Batter was really sticky and difficult to work with, but stayed in place on the sides
• Form into two pie pans, par bake for 15 to 20 minutes at 350, until just turning golden brown on the edges
*Next time use more butter and less liquid - as I think the extra butter would have helped make the crust more non-stick in the pan.

Custard filling
• 2 cups sugar
• 2T gluten free flour or corn starch to thicken custard.
• Stir dry ingredients to mix well
• Add:
• 1 cup whipping cream
• 2 eggs
• Mix well to combine
• Fold in two bunches of rhubarb, diced, about 8 cups
• Pour into pie crusts
• Bake 1 hour at 350, turning halfway

Chicago-Style Deep Dish Pizza Skillet

I love deep dish pizza, but have been avoiding gluten recently. Can a pizza be a pizza without a crust? A question for the ages. I for one enjoyed it well enough.

There’s not much to say for a recipe—prepare your filling, top with cheese, top with sauce, bake until bubbly and steaming. Enjoy!
