Pulled Pork

Going the opposite direction of my complex pulled pork recipes, this one focuses on simplicity. It is its own reward:

  • 1 boneless pork shoulder
  • 1 whole yellow onion, chopped
  • 1 bulb of garlic, peeled (approx 10 or 15 cloves)
  • 1T salt
  • 2T olive oil
  • 1/2 c white vinegar
  • 1 c water

WP_000244Brown pork in Dutch oven on medium-high heat. Add onions and garlic. Pour over liquids and salt. Cook at 325 for 3 hours. Remove from oven, shred pork, put back in oven for 30 more minutes or until desired moistness.
