Going the opposite direction of my complex pulled pork recipes, this one focuses on simplicity. It is its own reward:
- 1 boneless pork shoulder
- 1 whole yellow onion, chopped
- 1 bulb of garlic, peeled (approx 10 or 15 cloves)
- 1T salt
- 2T olive oil
- 1/2 c white vinegar
- 1 c water
Brown pork in Dutch oven on medium-high heat. Add onions and garlic. Pour over liquids and salt. Cook at 325 for 3 hours. Remove from oven, shred pork, put back in oven for 30 more minutes or until desired moistness.
